With a long history of family businesses in food service including a pizzeria in Potts Point in the late 80's From the age of 13 Romano was making pizzas for his home economics class at school. The love of pizza is in his blood Romano and Gigi shared passion for pizza was the foundation of a unique partnership which is now Tipo 00 in Balmain.
Born and raised in a small town at the foot of Mount Vesuvius, Gigi has been making pizza for as long as he can remember. Gigi has showcased his love and passion for making pizza by learning all that he can about making pizza and in working across Australia’s most prominent restaurants. Gigi has thrived in boutique pizzerias across Sydney, and learned from some of the world’s most renown chefs.
He has been mentored by executive Chef Monti Koludrovic, and was a driving force behind the success of the innovative restaurant and pizzeria within the Dolphin Hotel. In this role, Gigi also collaborated with culinary gems including Luke Powel, Louis Tikaram, Paul Carmichael, Mitch Orr and Joe Beddia. Gigi has thrived as a Head Pizza Chef and has enhanced the way we think about and eat pizza. As the Head Pizza Chef at Pizza Madre, Gigi applied his diverse skills making pizza and knowledge of flavour to design a revolutionary, completely vegan pizzeria menu from a sourdough starter.
After this, Gigi joined the team at Sydney Icon, Frankie’s Pizza by the Slice. Excited by the passion and raw talent (both musically and culinary) at Frankies, Gigi learned how to holistically and successfully manage a busy pizzeria. He reminded patrons why they love pizza, and his staff, why they love to make it. Whilst working at Frankies, Gigi met Romano, who emphasised the need to venture solo in order showcase his passion, creativity and talent. He convinced Gigi to open a pizzeria together, and with that… Tipo 00 Balmain was born.
